Ingredients:

  • 5 large eggs, separated
  • 160 g (1 1⁄4 cup) all-purpose flour
  • 160 g (3⁄4 cup) sugar
  • 120 g (2/3 cup) chocolate chips
  • 500 g (2 cups) hazelnut paste

Method:

1. Begin by beating the egg whites until they form stiff peaks.

2. In a separate bowl, beat the egg yolks with sugar until they turn pale and fluffy. Gradually add the flour and mix until well combined.

3. Gently fold the whipped egg whites into the egg yolk mixture until just incorporated. Be careful not to deflate the egg whites.

4. Add the chocolate chips to the batter and fold gently to distribute evenly.

5. Line a baking tray with parchment paper and spread the batter evenly onto it.

6. Bake in a preheated oven at 180°C/350°F for 10-12 minutes, or until the cake is lightly golden and springs back when touched.

7. While the cake is still hot, spread the hazelnut paste evenly over the surface.

8. Carefully roll the cake into a tight spiral, starting from one end.

9. Allow the cake to cool completely before slicing into beautiful swirls of chocolaty goodness.
