Delicious Carrot Cupcakes Recipe
Ingredients:
- 2 cups of all-purpose flour
- 1 cup of granulated sugar
- 3 cups of grated carrots (approximately 6 carrots)
- 3 eggs
- 1 cup of chopped walnuts
- 3/4 cup of vegetable oil
- 1 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1 1/2 teaspoons of ground cinnamon
- A pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 6-cavity mini loaf tray.
- In a large bowl, combine the grated carrots, flour, sugar, walnuts, oil, eggs, baking soda, baking powder, cinnamon, and salt until well mixed.
- Pour the batter into the prepared tray, filling each cupcake cavity about 3/4 full.
- Bake in the preheated oven for approximately 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Allow the cupcakes to cool in the tray for 5 to 10 minutes before serving.
