Ingredients:

  • 2 eggs
  • 100g sugar
  • 1 pack vanilla extract
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • A pinch of salt
  • 2 cups all-purpose flour
  • 1 pack baking powder (about 1 teaspoon)
  • 50g raisins

For Garnish:

  • Jam
  • Desiccated coconut

Instructions:

  1. Preparation: Preheat your oven to 180°C (350°F). Grease a cake pan with butter or oil and set aside.
  2. Mixing the Batter: In a large mixing bowl, beat eggs, sugar, and vanilla extract until creamy. Add yogurt, milk, and vegetable oil, mixing well after each addition.
  3. Incorporate Dry Ingredients: Sift in the flour, baking powder, and a pinch of salt directly into the wet mixture. Mix gently until just combined. Fold in the raisins evenly.
  4. Baking: Pour the batter into the prepared cake pan, spreading it evenly. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Finishing Touches: Once baked, remove the cake from the oven and allow it to cool slightly in the pan. Carefully invert the cake onto a plate. While still warm, spread a thin layer of jam over the top. Sprinkle generously with desiccated coconut.
