Ingredients:
- 2 cups of mashed potatoes
- 1 beaten egg
- 1/2 cup of all-purpose flour
- 1/4 cup of breadcrumbs
- 1/4 teaspoon of salt
- 1/8 teaspoon of black pepper
- Vegetable oil (for frying)
Instructions:
- Preheat the oven to 200 degrees F (93 degrees C).
- In a large bowl, thoroughly mix together the mashed potatoes, beaten egg, flour, breadcrumbs, salt, and pepper until well combined.
- Shape the mixture into small patties, approximately 2 inches in diameter.
- Heat vegetable oil in a large skillet over medium heat.
- Fry the potato cakes in batches for 2-3 minutes per side, or until they turn golden brown and are cooked through.
- Place the fried potato cakes on paper towels to drain excess oil.
- Serve immediately or transfer them to a baking sheet and bake in the oven for 10 minutes to achieve a crispy texture.
