Ingredients:

  • 2 cups of mashed potatoes
  • 1 beaten egg
  • 1/2 cup of all-purpose flour
  • 1/4 cup of breadcrumbs
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of black pepper
  • Vegetable oil (for frying)

Instructions:

  1. Preheat the oven to 200 degrees F (93 degrees C).
  2. In a large bowl, thoroughly mix together the mashed potatoes, beaten egg, flour, breadcrumbs, salt, and pepper until well combined.
  3. Shape the mixture into small patties, approximately 2 inches in diameter.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Fry the potato cakes in batches for 2-3 minutes per side, or until they turn golden brown and are cooked through.
  6. Place the fried potato cakes on paper towels to drain excess oil.
  7. Serve immediately or transfer them to a baking sheet and bake in the oven for 10 minutes to achieve a crispy texture.
