Delicious Potato Salad

Ingredients:

  • 3-4 medium potatoes
  • 5-6 gherkin pickles
  • 3-4 sprigs of spring onion
  • 1 medium red onion
  • 2 roasted capia peppers
  • 5-6 sprigs of parsley, finely chopped
  • 5-6 sprigs of dill, finely chopped

For the dressing:

  • 2 tablespoons yogurt
  • 4 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 2-3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the Potatoes: Wash and peel the potatoes (optional). Dice them into bite-sized pieces.
  2. Cook the Potatoes: Boil the diced potatoes in salted water until tender. Drain and set aside to cool.
  3. Roast the Capia Peppers: Place the capia peppers in the oven and roast until the skin is charred. Remove from oven, let them cool, then peel and chop finely.
  4. Prepare the Vegetables: Dice the gherkin pickles, spring onions, and red onion into small cubes.
  5. Prepare the Herbs: Finely chop the parsley and dill.
  6. Combine Ingredients: In a large bowl, combine the boiled potatoes, chopped capia peppers, diced pickles, spring onions, red onion, parsley, and dill.
  7. Make the Dressing: In a separate bowl, whisk together yogurt, mayonnaise, mustard, olive oil, lemon juice, salt, and black pepper until smooth and well combined.
  8. Assemble the Salad: Pour the dressing over the potato and vegetable mixture. Gently toss until everything is evenly coated with the dressing.
  9. Serve: Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together. Enjoy your delicious potato salad!
