2 tablespoons gelatin (Use agar-agar for a vegetarian option.)
0.5 cup sugar (Adjust based on sweetness of mango pulp.)
1 cup boiling water (Use freshly boiled water.)
1 cup evaporated milk (Can substitute with coconut milk.)
1 cup mango pulp (Canned pulp for best texture.)
Instructions
Combine 2 tablespoons of gelatin and ½ cup of sugar in a large mixing bowl. Pour in 1 cup of boiling water, stirring vigorously until completely dissolved.
Add 1 cup of evaporated milk, 1 cup of mango pulp, and juice of half a lemon to the mixture. Whisk until smooth and well-combined.
Pour the mixture into chosen molds or ramekins, filling them about three-quarters full.
Chill in the refrigerator for at least 2 hours to set properly.
Once set, gently remove from molds or serve directly from ramekins. Garnish with mint leaves or shredded coconut.
Notes
Adjust sugar based on the sweetness of the mango pulp.
