Ingredients

Scale
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white or apple cider vinegar
  • Salt and pepper, to taste
  • Paprika, for garnish
  • Fresh chives or parsley, for garnish (optional)

Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with cold water. Bring to a boil over medium-high heat. Cover, remove from heat, and let sit for 9-12 minutes.
  2. Cool the eggs: Transfer eggs to an ice bath or run under cold water for 15-30 minutes to stop cooking.
  3. Peel the eggs: Gently tap and peel the cooled eggs. Rinse to remove shell bits.
  4. Slice the eggs: Cut each egg in half lengthwise. Remove yolks and place in a mixing bowl.
  5. Combine yolks and ingredients: Mash yolks with a fork. Add mayonnaise, Dijon mustard, vinegar, salt, and pepper. Mix until creamy.
  6. Fill the eggs: Spoon or pipe the yolk mixture back into the egg white halves.
  7. Garnish: Sprinkle with paprika and optional chives or parsley.
  8. Chill and serve: Refrigerate for 15-30 minutes before serving.
