1 teaspoon Garlic powder (Adjust according to your personal preference.)
1 teaspoon Paprika (Smoked paprika can be used as a substitute.)

8 small Tortillas (Opt for gluten-free if needed.)
1 cup Shredded mozzarella or Jack cheese (Any melting cheese works.)
1 cup Chopped dill pickles (Sweet pickles or olives can also be used.)
2 tablespoons Pickle brine (Adjust based on taste preference.)
1 cup Shredded cabbage (Other greens like lettuce can be substituted.)
1 cup Cottage cheese (Blend with ranch seasoning and lemon.)
Instructions
In a large mixing bowl, combine the ground chicken with garlic powder, paprika, salt, and black pepper. Mix thoroughly until all ingredients are incorporated.
Heat a non-stick skillet over medium heat and add the seasoned chicken mixture. Cook for about 8-10 minutes, stirring occasionally until fully cooked and golden brown. Remove from heat.
In another non-stick skillet, sprinkle shredded cheese in a thin layer. Heat over medium-low for 3-4 minutes until bubbly and golden. Remove carefully and set aside.
Warm the tortillas in a clean skillet over medium heat for about 30 seconds on each side.
Assemble the tacos by laying a warm tortilla on a plate, adding cooked chicken, chopped pickles, and cabbage.
Blend cottage cheese with ranch seasoning and lemon. Use as a topping for tacos.
Drizzle pickle brine over toppings, add crispy cheese lace on top, and serve.
