A delicious and quick breakfast treat, these Eggs Bacon Quesadillas combine scrambled eggs, crispy bacon, and melted cheese inside a golden-brown tortilla. Perfect for busy mornings or a relaxed brunch.

Ingredients

  • 2 cups shredded cheese
  • 1/4 cup whole milk or heavy cream
  • 1/2 cup diced red pepper
  • 6 large eggs
  • 8 slices of thin bacon
  • 6 sausage links or 1/4 pound ground sausage
  • 2 diced jalapeños (seeds removed)
  • 1/2 cup diced onions
  • 2 tablespoons unsalted butter
  • 8 (6-inch) soft flour tortillas
  • Optional: pico de gallo

Instructions

  1. Crack the eggs into a mixing bowl, pour in the milk or cream, and whisk until smooth.
  2. Cook bacon in a large skillet until crispy. Drain on paper towels.
  3. In the same skillet, cook sausage until browned. Drain on paper towels.
  4. Sauté diced onions and peppers in the skillet for 3-4 minutes until softened. Remove and set aside.
  5. Wipe the skillet clean, add butter, and cook the whisked eggs until fluffy and set. Set aside.
  6. Butter one side of a tortilla and place it butter-side down in the skillet over medium heat.
  7. Layer with cheese, scrambled eggs, bacon, sausage, onions, and peppers. Add more cheese if desired. Top with another tortilla, butter-side up.
  8. Cook for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes until golden and crisp.
  9. Slice the quesadilla into four pieces and serve with pico de gallo if desired.

  • Customize with your favorite vegetables.
  • Serve with salsa or hot sauce for extra flavor.
  • For a vegetarian option, omit the bacon and sausage and add more vegetables.
  • Use corn tortillas for a gluten-free version.
