Emaurans Fourie’s Award-Winning Recipe: Marmite Biltong and Cheese Muffins

Ingredients:

  • 150 g Biltong, finely chopped
  • 3 tbsp Butter, melted
  • 2 cups Cake flour
  • 2 tsp Baking powder
  • 2 tbsp Sugar
  • 2 Eggs
  • 1 cup Milk
  • 1 cup Cheddar cheese, grated
  • 3 tbsp Marmite
  • Handful of chopped fresh chives

Instructions:

  1. Preheat your oven to 190Β°C (375Β°F) and grease your muffin tins with butter.
  2. Mix the melted butter and chopped chives together and set aside to cool slightly.
  3. In a bowl, combine the flour, baking powder, sugar, and a pinch of salt. Mix thoroughly with a spoon.
  4. In a separate large bowl, lightly whisk the eggs, milk, and Marmite together. Then, add the butter and chive mixture, grated cheese, and chopped biltong. Mix well to combine.
  5. Gradually add the flour mixture to the egg mixture, stirring gently with a spoon in a folding motion until just combined.
  6. Fill each muffin tin about two-thirds full with the batter. Bake for approximately 20 minutes or until the muffins are golden brown.
  7. Once baked, remove the muffins from the tins and allow them to cool on a wire rack.
