Exquisite Pineapple Chicken Fried Rice Recipe
Ingredients:
- 1.5 pounds boneless chicken breasts
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon vegetable oil
- 1 can (20 oz.) sliced pineapple, juice reserved
- 1 tablespoon cornstarch
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 garlic cloves, minced
- 4 servings of cooked rice
Directions:
- Begin by seasoning the chicken breasts with thyme, salt, and pepper.
- Heat vegetable oil in a skillet over medium heat and brown the chicken until cooked through.
- Drain the pineapple slices, keeping the juice for the sauce.
- In a small bowl, mix cornstarch with 2 oz. of the reserved pineapple juice and set aside.
- In another bowl, combine the remaining pineapple juice, Dijon mustard, honey, and minced garlic.
- Pour the Dijon mixture into the skillet, reduce heat to low, cover, and simmer for 15 minutes.
- Once done, remove the chicken from the skillet and set aside.
- Re-stir the cornstarch mixture and add it to the skillet. Allow the sauce to boil, stirring constantly for 2 minutes until it thickens.
- Lower the heat, return the chicken to the skillet, and coat it in the sauce.
- Arrange the pineapple slices around and on top of the chicken, cover, and cook for an additional 2-3 minutes to warm the pineapple.
- Serve the chicken and pineapple over cooked rice.
