Exquisite Pineapple Chicken Fried Rice Recipe

Ingredients:

  • 1.5 pounds boneless chicken breasts
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 can (20 oz.) sliced pineapple, juice reserved
  • 1 tablespoon cornstarch
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 garlic cloves, minced
  • 4 servings of cooked rice

Directions:

  1. Begin by seasoning the chicken breasts with thyme, salt, and pepper.
  2. Heat vegetable oil in a skillet over medium heat and brown the chicken until cooked through.
  3. Drain the pineapple slices, keeping the juice for the sauce.
  4. In a small bowl, mix cornstarch with 2 oz. of the reserved pineapple juice and set aside.
  5. In another bowl, combine the remaining pineapple juice, Dijon mustard, honey, and minced garlic.
  6. Pour the Dijon mixture into the skillet, reduce heat to low, cover, and simmer for 15 minutes.
  7. Once done, remove the chicken from the skillet and set aside.
  8. Re-stir the cornstarch mixture and add it to the skillet. Allow the sauce to boil, stirring constantly for 2 minutes until it thickens.
  9. Lower the heat, return the chicken to the skillet, and coat it in the sauce.
  10. Arrange the pineapple slices around and on top of the chicken, cover, and cook for an additional 2-3 minutes to warm the pineapple.
  11. Serve the chicken and pineapple over cooked rice.
