Ingredients:

  • 5 eggs
  • ½ cup sugar
  • 1 1/2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 4 cups 2% or whole milk
  • Nutmeg for topping

Instructions:

  1. Preparation: Preheat oven to 350°F (175°C) and lightly grease an 8×8 baking dish.
  2. Mixing the Custard: In a large bowl, whisk together eggs, sugar, vanilla extract, and salt until well combined.
  3. Heating the Milk: In a small saucepan, heat the milk over medium heat until it reaches about 180°F (just before it simmers; do not boil).
  4. Combining Ingredients: Gradually pour the hot milk into the egg mixture, whisking constantly until fully incorporated. Whisk vigorously for an additional minute to ensure smoothness.
  5. Baking:
    • Pour the custard mixture into the prepared baking dish. Sprinkle the top with nutmeg if desired.
    • Place the baking dish into a larger pan and fill the larger pan with water until it reaches about 1 inch deep around the custard dish (this creates a water bath).
    • Carefully transfer to the preheated oven. Bake for 45-50 minutes, or until a knife inserted near the center comes out clean. The custard should still jiggle slightly in the center.
    • Avoid overbaking to prevent curdling.
  6. Serving:
    • Serve the custard warm or chilled. Optionally, top with whipped cream, fresh fruit, or additional spices to taste.
    • Any leftovers can be refrigerated for later enjoyment.
