Servings: 10 people

Ingredients:

  • 5 cups of rice
  • 1 cup of sweet corn
  • 2 cups of sliced carrots
  • 2 cups of sliced green beans
  • 1 cup of peas
  • 1 cup of sliced yellow pepper
  • 1 cup of sliced red pepper
  • 1 cup of sliced green pepper
  • 1/2 kg cow liver
  • 2 kg chicken
  • 250 ml vegetable oil
  • 1 cup of sliced onions
  • 8 seasoning cubes
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 tablespoons curry powder (for coloring and flavor)
  • Salt to taste
  • Pepper to taste

Method of Preparation:

  1. Prepare the Chicken:

    Cook the chicken until tender, then fry until golden brown. Set aside.

  2. Prepare the Liver:

    Cook the cow liver until done, dice into small pieces, and fry until crispy. Set aside.

  3. Prepare the Vegetables:

    Wash and slice all the vegetables (carrots, green beans, peppers, and onions).

  4. Prepare the Rice:

    Parboil the rice with a bit of curry powder until almost cooked. Rinse and set aside.

  5. Stir-fry the Vegetables:

    In a large pan, heat the vegetable oil over medium heat. Add the sliced onions and sauté until translucent.

    Add the remaining vegetables, seasoning cubes, thyme, rosemary, salt, and pepper. Stir-fry for a few minutes until the vegetables are tender but still crisp.

    Add the sweet corn and fried liver to the vegetable mix.

  6. Combine the Rice and Vegetables:

    Add the parboiled rice to the stir-fried vegetables. Mix thoroughly to ensure the rice is well combined with the vegetables and liver.

  7. Final Adjustments:

    Taste the mixture and adjust the seasoning if needed. Cover the pan and let it simmer on low heat for 5 to 10 minutes, allowing the flavors to meld.

  8. Serve:

    Serve the fried rice hot, accompanied by the fried chicken.
