Light and Fluffy Moroccan Mkhnefar Recipe
Ingredients
- 2 cups fine semolina or durum wheat flour
- 2 cups all-purpose flour
- 1 tablespoon oil
- 1 egg
- 1 tablespoon granulated sugar
- 1 tablespoon active dry yeast
- 1 packet baking powder
- A pinch of salt
- Warm water as needed

Prepare the Batter:
- In a blender, combine the semolina, flour, oil, egg, sugar, yeast, baking powder, and salt.
- Gradually add warm water while blending until you achieve a smooth batter.

Fermentation:
- Let the batter rest and rise for about 15 minutes in a warm place.

- Lightly grease a skillet with a bit of oil and heat it over medium heat.
- Pour a small amount of the batter into the skillet.
- Cook until bubbles form on the surface and the edges are set, then flip to cook the other side.
- Repeat with the remaining batter, ensuring the heat remains on low to medium to cook through without burning.
