  • 1 tablespoon baking powder

  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 cup milk (any kind)
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples (Granny Smith or Honeycrisp work great)
  • ¼ cup chopped walnuts or pecans (optional)
  • 1 tablespoon sugar mixed with ½ teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups with non-stick spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
  3. In another bowl, whisk together the granulated sugar and brown sugar until well combined.
  4. In a separate medium bowl, beat the eggs. Then, add the melted butter, milk, and vanilla extract, mixing until combined.
  5. Pour the wet mixture into the bowl with the sugars and mix until just combined. Avoid overmixing.
  6. Gently fold the dry ingredients into the wet ingredients until just mixed. The batter will be thick.
  7. Carefully fold in the diced apples and walnuts or pecans (if using), ensuring they are evenly distributed within the batter.
  8. Using a scooper or spoon, fill each muffin cup about ¾ full with the batter.
  9. In a small bowl, mix the additional sugar and cinnamon together. Sprinkle this mixture on top of each muffin.
  10. Place in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove from the oven and let cool in the pan for about 5 minutes. Then transfer the muffins to a wire rack to cool completely.
