Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¾ cup whole milk
  • â…“ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled, diced apples (about 2 medium-sized apples)
  • ½ cup chopped walnuts or pecans (optional)
  • Cinnamon sugar topping (2 tablespoons granulated sugar mixed with 1 teaspoon ground cinnamon)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a medium bowl, combine the diced apples with 1 tablespoon of flour. Toss until the apples are well coated.
  3. In a large bowl, whisk together the remaining flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  4. In a separate bowl, whisk together the milk, melted butter, eggs, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix.
  6. Fold in the coated apple pieces and nuts (if using) until evenly distributed.
  7. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  8. Sprinkle a little cinnamon sugar on top of each muffin before baking.
  9. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  11. Enjoy these fluffy cinnamon apple muffins warm or at room temperature.

Notes

  • Using room temperature ingredients can help create a lighter batter.
  • Avoid overmixing the batter to ensure fluffy muffins.
  • The flour coating on the apples prevents them from sinking.
  • Adjust baking time as needed; ovens vary.
