  • 2 large Eggs
  • 2 tablespoons Mustard (Prepared yellow mustard)
  • 1 cup Milk
  • 1 cup Flour (All-purpose or gluten-free)
  • 1 cup Fish Fry Mix (Slap Ya Mama mix recommended)
  • 2 cups Oil (for frying, vegetable or canola)

Instructions

  1. Thaw and clean the soft shell crabs by rinsing them under cold water and patting them dry.
  2. Prepare the milk bath by whisking together eggs, mustard, and milk in a medium bowl until smooth.
  3. Coat each cleaned crab by dipping it into the milk bath, then dredge it in the mixture of flour and fish fry mix, pressing gently to ensure an even coating.
  4. Preheat oil in a deep fryer or large skillet to 350°F (175°C).
  5. Carefully add the coated crabs to the hot oil, legs first, and fry for about 2-3 minutes on each side, or until they are a beautiful golden brown.
  6. Using a slotted spoon, remove the fried soft shell crabs from the oil and place them on a wire rack set over a baking sheet to drain excess oil.
  7. Let the crabs rest for a few minutes before serving.
  8. Serve with your favorite dipping sauce and accompaniments like creamy coleslaw or fries.
