Pat the chicken thighs completely dry with paper towels.
Season the chicken thighs generously with salt and pepper.
Heat a large oven-safe skillet over medium-high heat. Add a tablespoon of high smoke point oil (like canola or avocado oil).
Sear the chicken thighs, skin-side down, for about 5-7 minutes until the skin is golden brown and crispy. Flip and sear the other side for 2-3 minutes.
Remove the chicken thighs from the skillet and set aside.
Reduce the heat to medium. Add the butter to the skillet.
