  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups vegetable or chicken broth

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the potatoes and cut them into uniform cylindrical shapes, about 2-3 inches in height.
  3. Melt 2 tablespoons of butter in an oven-safe skillet over medium heat. Sear the potato cylinders for approximately 5 minutes on each side until they achieve a golden-brown color.
  4. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  5. Pour in the broth and season with thyme, salt, and pepper. The liquid should reach about halfway up the sides of the potatoes.
  6. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the potatoes are tender when pierced with a fork.
  7. Remove the skillet from the oven and add the remaining 2 tablespoons of butter on top of the potatoes. Let it melt and meld with the broth.
  8. Garnish with fresh parsley before serving.
