Ingredients

Scale
  • 1.5 lbs Brussels sprouts, trimmed and halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
  • Zest of 1 lemon
  • Grated Parmesan cheese (optional, for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the trimmed and halved Brussels sprouts with olive oil, salt, and black pepper. Toss until evenly coated.
  3. In a small saucepan over low heat, melt the butter. Once melted, stir in the minced garlic and thyme. Cook for about 2 minutes until the garlic is fragrant but not browned. Remove from heat and stir in the balsamic vinegar and lemon zest.
  4. Pour the garlic butter mixture over the seasoned Brussels sprouts in the bowl. Toss well to ensure the sprouts are evenly coated.
  5. Spread the Brussels sprouts in a single layer on a large baking sheet.
  6. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.
  7. Once roasted, remove the Brussels sprouts from the oven and transfer to a serving dish. If desired, sprinkle with grated Parmesan cheese and fresh parsley for garnish. Drizzle with a little extra balsamic vinegar for added flavor.
  8. Serve warm as a delightful side dish alongside your favorite protein or on their own as a tasty snack!

Notes

  • For crispier sprouts, ensure they are in a single layer on the baking sheet and not overcrowded.
  • Adjust roasting time based on your oven and desired level of crispiness.
