  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (or to taste)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a medium bowl, combine the melted butter, minced garlic, lemon juice, lemon zest, smoked paprika, red pepper flakes, salt, and black pepper. Whisk together to create the garlic butter marinade.
  2. Add the cleaned and deveined shrimp to the bowl with the marinade. Toss gently to ensure each shrimp is evenly coated.
  3. Let the shrimp marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for a deeper flavor.
  4. Preheat your oven to 400°F (200°C) or prepare your grill to medium-high heat (350°F-400°F / 175°C-200°C).
  5. Thread the marinated shrimp onto the soaked wooden skewers, leaving a small space between each shrimp for even cooking.
  6. If oven roasting, arrange the shrimp skewers on a baking sheet lined with parchment paper. Roast for 8-10 minutes, flipping halfway through, until the shrimp are opaque and pink.
  7. If grilling, place the skewers on the preheated grill. Grill for 2-3 minutes per side, or until the shrimp are opaque and pink.
  8. Remove the shrimp skewers from the oven or grill.
  9. Garnish with fresh chopped parsley.
  10. Serve immediately with lemon wedges on the side.
