Ingredients

Scale
  • 1.5 lbs pork tenderloin
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Juice of 1 lemon
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, olive oil, Dijon mustard, salt, black pepper, paprika, and lemon juice. Mix well until a paste forms.
  3. Pat the pork tenderloin dry with paper towels. Rub the garlic herb marinade all over the tenderloin, ensuring it’s evenly coated. For best flavor, cover the tenderloin with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to overnight.
  4. Heat a large oven-safe skillet over medium-high heat. Once hot, add a drizzle of olive oil and sear the marinated pork tenderloin for about 2-3 minutes on each side, until it’s nicely browned.
  5. Transfer the skillet to the preheated oven and roast the pork tenderloin for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer for accuracy.
  6. Once cooked, remove the tenderloin from the oven and transfer it to a cutting board. Cover it loosely with aluminum foil and let it rest for about 5-10 minutes. This allows the juices to redistribute, ensuring a moist tenderloin.
  7. After resting, slice the pork tenderloin into medallions. Serve with lemon wedges on the side for an extra zing of flavor.

Notes

  • For best flavor, marinate the pork tenderloin overnight.
  • Ensure the internal temperature reaches 145°F (63°C) for medium doneness.
  • Resting the pork for 5-10 minutes after cooking is crucial for juiciness.
