  • 4 medium russet potatoes, thinly sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 jalapeño, sliced (optional)
  • Fresh parsley, chopped (for garnish)
  • Sour cream or Greek yogurt, for serving

Instructions

  1. Preheat oven to 200°C. Line a large baking sheet with parchment paper.
  2. In a large bowl, toss thinly sliced potatoes with olive oil, minced garlic, smoked paprika, Italian seasoning, salt, and pepper until evenly coated.
  3. Arrange seasoned potato slices in a single layer on the prepared baking sheet. Bake for 25–30 minutes, flipping halfway through, until crisp and golden brown.
  4. Remove the tray from the oven. Evenly distribute mozzarella and Parmesan cheeses over the hot potato slices. Top with sliced jalapeños if desired.
  5. Return tray to oven and bake for an additional 5–7 minutes, or until cheese is fully melted and bubbly.
  6. Once cooked, allow to cool slightly. Garnish with chopped fresh parsley before serving alongside sour cream or Greek yogurt.
