12 ounces pasta (spaghetti or your choice)
½ cup black walnuts, chopped
1 cup breadcrumbs (preferably panko)
4 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon red pepper flakes (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional, for serving)
Cook pasta in salted boiling water until al dente. Drain and set aside.
Toast chopped black walnuts in a skillet over medium heat until fragrant, about 3-4 minutes. Remove and set aside.
In the same skillet, add 2 tablespoons of olive oil. Toast breadcrumbs until golden brown, stirring frequently for 4-5 minutes. Transfer to a bowl.
Add remaining olive oil to the skillet. Sauté minced garlic for 1-2 minutes until fragrant.
Add cooked pasta to the skillet with the garlic. Toss to coat.
Stir in toasted walnuts and red pepper flakes (if using). Season with salt and pepper.
Remove from heat. Top with toasted breadcrumbs and chopped parsley.
