Giant Christmas Wreath Cookie Cake for Festive Cheer

  • 1 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 3 cups unbleached all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips (plus extra for decoration)
  • 1 cup sprinkles (optional)

Instructions

  1. Begin by softening the unsalted butter and large eggs to room temperature.
  2. In a mixing bowl, whisk together unbleached all-purpose flour, cornstarch, baking soda, and salt.
  3. In a stand mixer, cream together softened butter, light brown sugar, and granulated sugar until light and fluffy.
  4. Add in the room-temperature eggs and vanilla extract, mixing until smooth.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  8. Preheat the oven to 350°F (175°C) and prepare a pizza pan.
  9. Press the chilled dough evenly into the prepared pan and add more chocolate chips on top if desired.
  10. Bake for 16-18 minutes or until edges are golden and the center is set.
  11. Allow to cool in the pan while making the frosting.
  12. Beat together softened butter, powdered sugar, heavy cream, vanilla extract, and a pinch of salt until smooth.
  13. Decorate the cooled cookie cake with frosting and sprinkles.
