Gingerbread Pancakes Recipe: An Incredible Ultimate Delight.

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 cup milk (or dairy-free alternative)
  • 1/4 cup molasses
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)

Instructions

  1. Heat a non-stick skillet or griddle over medium heat.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, ginger, cinnamon, nutmeg, cloves, salt, and brown sugar until well combined.
  3. In another bowl, mix the milk, molasses, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix. The batter should be slightly lumpy.
  5. Lightly grease the skillet with a little butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
  6. Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining batter.
  7. Once all pancakes are cooked, stack them on plates and get ready to enjoy!
