Ingredients
Scale
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ teaspoon salt
2 large eggs
1 ½ cups milk
½ cup molasses
¼ cup vegetable oil
1 teaspoon vanilla extract
Whipped cream, for topping (optional)
Maple syrup, for serving
Powdered sugar, for garnish (optional)
Instructions
Start by preheating your waffle maker according to the manufacturer’s instructions.
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
In another bowl, beat the eggs, then add the milk, molasses, vegetable oil, and vanilla extract. Mix until well combined.
Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
Lightly grease the preheated waffle maker if necessary. Pour the recommended amount of batter onto the waffle maker and close the lid. Cook according to your waffle maker’s instructions until golden brown and crispy.
Continue cooking until all the batter is used. Keep the cooked waffles warm in an oven set to low heat if necessary.
When ready to serve, stack the waffles on plates and top with whipped cream, maple syrup, and a dusting of powdered sugar if desired.
