Grilled Baby Octopus with Nuoc Cham is a flavorful Vietnamese appetizer featuring tender, smoky octopus marinated and dipped in a zesty, spicy sauce. It’s an easy-to-prepare dish perfect for gatherings.

  • 1 lb Baby Octopus
  • 2 tbsp Lemon Juice
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 1 tsp Red Pepper Flakes
  • 1 tsp Kosher Salt
  • 1 tsp Pepper
  • 3 tbsp Fish Sauce
  • 1 tbsp Sugar
  • 3 tbsp Water
  • 2 tbsp Lime Juice
  • 1 medium Chili Pepper, sliced

Instructions

  1. Bring a pot of salted water to a boil. Add baby octopus and cook for 1 minute to tenderize. Drain well.
  2. In a bowl, combine drained octopus with lemon juice, minced garlic, olive oil, red pepper flakes, salt, and pepper. Toss to coat. Marinate in the refrigerator for at least 2 hours.
  3. While octopus marinates, prepare the Nuoc Cham sauce: whisk together fish sauce, sugar, water, lime juice, and sliced chili pepper. Adjust seasoning to taste.
  4. Preheat grill to medium-high heat. Clean and lightly oil the grates.
  5. Place marinated octopus on the hot grill. Grill for 3-4 minutes, turning occasionally, until lightly charred and heated through.
  6. Remove octopus from the grill and place on a serving platter. Drizzle generously with Nuoc Cham sauce.

  • Marinate octopus for at least 2 hours for optimal flavor.
  • Avoid overcooking the octopus to prevent a rubbery texture.
  • Taste and adjust Nuoc Cham sauce seasoning (sweetness/spice) to your preference.
