Festive Grinch Pancakes That Will Brighten Your Holiday Mornings

  • 4 ounces Cream Cheese
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Granulated Sugar
  • few drops Green Food Coloring
  • 1 cup All-Purpose Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 Egg
  • 1 cup Buttermilk
  • 2 tablespoons Butter
  • as needed Red Heart Candies/Sprinkles

Instructions

  1. In a medium bowl, beat 4 ounces of cream cheese with 1 cup of powdered sugar and 1 teaspoon of vanilla extract until smooth, about 3-5 minutes.
  2. Chill a mixing bowl and beaters, then pour in 1 cup of heavy whipping cream, add 2 tablespoons of powdered sugar, 1 teaspoon of vanilla, and green food coloring. Beat until stiff peaks form.
  3. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
  4. In a separate bowl, crack 1 egg, whisk lightly, then add 1 cup of buttermilk and 2 tablespoons of melted butter, mixing well.
  5. Combine the wet mixture with the dry ingredients and gently stir until just combined.
  6. Preheat a non-stick skillet over medium heat, pour 1/4 cup of batter for each pancake, and cook until bubbles form on the surface.
  7. Stack pancakes on a serving plate, top with cream cheese icing and green whipped cream, and sprinkle with red heart candies.

Notes
