Quick and easy ground turkey and peppers stir-fry, perfect for a weeknight dinner.

  • 1 lb ground turkey (lean)
  • 3 bell peppers (mixed colors), sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup chicken or vegetable broth
  • Optional: Crushed red pepper flakes
  • Optional: Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the ingredients: Wash and slice the bell peppers, chop the onion, and mince the garlic.
  2. Cook the ground turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey and break it up with a spoon. Cook until browned, about 6-8 minutes.
  3. Add vegetables and spices: Add onions and garlic to the skillet. Cook for 2-3 minutes until softened. Add bell peppers, cumin, chili powder, paprika, oregano, salt, and pepper. Stir to coat. Cook for 5-7 minutes until peppers soften slightly.
  4. Add broth and simmer: Pour in broth and bring to a simmer. Cook for 5 minutes, allowing flavors to meld and broth to reduce.
  5. Taste and adjust: Season to taste. Add crushed red pepper flakes for extra heat, if desired.
  6. Serve and enjoy: Serve hot with rice, in wraps, or on its own. Garnish with cilantro or parsley.
