1 lb ground turkey (lean)
3 bell peppers (mixed colors), sliced
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon dried oregano
Salt and pepper to taste
1/2 cup chicken or vegetable broth
Optional: Crushed red pepper flakes
Optional: Fresh cilantro or parsley for garnish
Instructions
Prepare the ingredients: Wash and slice the bell peppers, chop the onion, and mince the garlic.
Cook the ground turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey and break it up with a spoon. Cook until browned, about 6-8 minutes.
Add vegetables and spices: Add onions and garlic to the skillet. Cook for 2-3 minutes until softened. Add bell peppers, cumin, chili powder, paprika, oregano, salt, and pepper. Stir to coat. Cook for 5-7 minutes until peppers soften slightly.
Add broth and simmer: Pour in broth and bring to a simmer. Cook for 5 minutes, allowing flavors to meld and broth to reduce.
Taste and adjust: Season to taste. Add crushed red pepper flakes for extra heat, if desired.
Serve and enjoy: Serve hot with rice, in wraps, or on its own. Garnish with cilantro or parsley.
