Hawaiian Pineapple Cake
Ingredients:
- 2 cups all-purpose flour
- 2 cups sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 (20 oz) can crushed pineapple (undrained)
- 1 cup chopped nuts (optional)
Cream Cheese Frosting:
- 1/2 cup unsalted butter (1 stick), softened
- 1 (8 oz) package cream cheese, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups confectioners’ sugar
- Coconut flakes for garnish (optional)
Directions:
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, combine flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple with its juice. Stir until well combined. Add chopped nuts if using, and mix evenly.
- Pour the batter into the prepared pan, spreading it out evenly. Bake in preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Frosting:
- In a mixing bowl, beat together the butter, cream cheese, and vanilla extract until smooth and creamy.
- Gradually add the confectioners’ sugar, beating well after each addition until frosting is smooth and fluffy.
- While the cake is still warm, spread the cream cheese frosting over the top evenly.
- Optionally, sprinkle with chopped nuts or coconut flakes for garnish.
