Hawaiian Pineapple Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 (20 oz) can crushed pineapple (undrained)
  • 1 cup chopped nuts (optional)

Cream Cheese Frosting:

  • 1/2 cup unsalted butter (1 stick), softened
  • 1 (8 oz) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ sugar
  • Coconut flakes for garnish (optional)

Directions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple with its juice. Stir until well combined. Add chopped nuts if using, and mix evenly.
  3. Pour the batter into the prepared pan, spreading it out evenly. Bake in preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Frosting:

  1. In a mixing bowl, beat together the butter, cream cheese, and vanilla extract until smooth and creamy.
  2. Gradually add the confectioners’ sugar, beating well after each addition until frosting is smooth and fluffy.
  3. While the cake is still warm, spread the cream cheese frosting over the top evenly.
  4. Optionally, sprinkle with chopped nuts or coconut flakes for garnish.
