Healthy Air Fryer Zucchini Fries are a crispy, flavorful, and guilt-free snack or side dish. Made with fresh zucchini, a light coating of panko breadcrumbs, and seasoned to perfection, these fries are cooked in an air fryer for a satisfying crunch without the excess oil.

Ingredients

Scale
  • 2 medium zucchini, washed and trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Cut zucchini into fry shapes (about 1/2 inch thick).
  3. Toss zucchini with olive oil, garlic powder, salt, and pepper in a bowl.
  4. In a separate bowl, combine panko breadcrumbs and Italian seasoning.
  5. Dredge each zucchini fry in the breadcrumb mixture, ensuring they are fully coated.
  6. Arrange zucchini fries in a single layer in the air fryer basket, ensuring they are not overcrowded.
  7. Air fry for 10-15 minutes, flipping halfway through, until golden brown and crispy.
  8. Serve immediately and enjoy!

Notes

  • For extra crunch, you can spray the fries with cooking spray before air frying.
  • Feel free to add other spices or toppings based on your preference.
  • These fries are best served fresh but can be stored in an airtight container for a short time.
