A hearty and comforting crockpot chicken and wild rice soup, perfect for a cozy meal. This slow cooker recipe is easy to prepare and packed with flavor.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup wild rice blend, rinsed
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 cup frozen peas
  • 1/2 cup heavy cream (optional)

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add diced onion, minced garlic, sliced carrots, and chopped celery on top of the chicken.
  3. Sprinkle the rinsed wild rice blend over the vegetables.
  4. Pour in the chicken broth.
  5. Add dried thyme, rosemary, bay leaf, salt, and pepper.
  6. Cover and cook on low for 6-7 hours, or until chicken is cooked through.
  7. Remove chicken from the crockpot, shred it, and return it to the pot.
  8. Stir in frozen peas and heavy cream (if using).
  9. Cook on high for another 20-30 minutes, until heated through and peas are tender.
  10. Remove bay leaf before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
  • A splash of lemon juice can brighten the flavors.
  • Garnish with fresh parsley before serving.
