- 2 pounds beef chuck roast, trimmed and cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon Worcestershire sauce
- 6 cups beef broth
- 1 cup pearl barley, rinsed
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley, for garnish
- Pat the beef cubes dry with paper towels.
- Heat olive oil in a skillet over medium-high heat. Sear the beef cubes on all sides until browned.
- Transfer the seared beef to the slow cooker.
- Add the chopped onion, minced garlic, carrots, and celery to the slow cooker.
- Stir in the dried thyme, dried rosemary, and Worcestershire sauce.
- Pour in the beef broth and add the rinsed pearl barley.
- Season with salt and black pepper. Stir to combine.
- Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and the barley is cooked.
- Taste and adjust seasoning if needed.
