A hearty and comforting beef and barley soup made in the slow cooker. This recipe is easy to prepare, making it perfect for busy weeknights.

  • 2 pounds beef chuck roast, trimmed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce
  • 6 cups beef broth
  • 1 cup pearl barley, rinsed
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Pat the beef cubes dry with paper towels.
  2. Heat olive oil in a skillet over medium-high heat. Sear the beef cubes on all sides until browned.
  3. Transfer the seared beef to the slow cooker.
  4. Add the chopped onion, minced garlic, carrots, and celery to the slow cooker.
  5. Stir in the dried thyme, dried rosemary, and Worcestershire sauce.
  6. Pour in the beef broth and add the rinsed pearl barley.
  7. Season with salt and black pepper. Stir to combine.
  8. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and the barley is cooked.
  9. Taste and adjust seasoning if needed.
  10. Ladle the hearty slow cooker beef and barley soup into bowls.
  11. Garnish with fresh parsley before serving.
