  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh lemon wedges, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, parsley, lemon zest, salt, and black pepper. Mix until well blended into a smooth paste.
  3. Pat the chicken drumsticks dry with paper towels. Place the drumsticks in a large bowl. Drizzle with olive oil and toss to coat evenly.
  4. Take about two-thirds of the herb butter mixture and rub it generously over the chicken drumsticks, ensuring it gets under the skin. Reserve the remaining herb butter for basting.
  5. Place the seasoned drumsticks on the prepared baking sheet, spaced apart for even cooking.
  6. Roast in the preheated oven for about 35-40 minutes, or until golden brown and an internal temperature reaches 165°F (75°C).
  7. During the last 10 minutes of cooking, baste the drumsticks with the reserved herb butter.
  8. Remove from the oven and let the drumsticks rest for about 5 minutes. Serve warm with fresh lemon wedges.
