  • 1 cup cottage cheese

  • 1 cup diced vegetables (bell peppers, spinach, or mushrooms)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: cooked bacon or sausage, for added protein
  • Optional: fresh herbs (chives, parsley) for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a large mixing bowl, whisk together the eggs and cottage cheese until smooth.
  3. Stir in the shredded cheese, ensuring it’s evenly distributed.
  4. Add the diced vegetables and any optional cooked meat, mixing until all ingredients are well combined.
  5. Sprinkle in the salt and black pepper, adjusting to your taste preferences.
  6. Carefully pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
  7. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
