Honey Butter Roasted Sweet Potatoes offer a delicious and nutritious side dish, combining the natural sweetness of sweet potatoes with honey and butter for a flavorful balance. They are perfect for weeknight dinners or special occasions and pair wonderfully with various main courses.

Ingredients

Scale
  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh rosemary or thyme, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cubed sweet potatoes with melted butter, honey, cinnamon, vanilla extract, salt, and black pepper. Toss everything together until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes out in a single layer on a large baking sheet lined with parchment paper. Make sure there is enough space between the cubes to allow for even roasting.
  4. Place the baking sheet in the preheated oven and roast the sweet potatoes for approximately 25-30 minutes. Stir halfway through to ensure even browning, until the sweet potatoes are tender and caramelized at the edges.
  5. Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh rosemary or thyme if desired, and serve warm.

Notes

  • For a vegan option, substitute coconut oil or vegan butter for unsalted butter and maple syrup for honey.
  • This recipe is naturally gluten-free.
  • Adding chopped walnuts or pecans before roasting can introduce a delightful crunch.
  • A sprinkle of orange or lemon zest can brighten the dish.
  • Consider incorporating spices like nutmeg or cayenne pepper for a different flavor profile.
