- 2 cups fresh citron (or yuzu), sliced thinly
- 1 cup honey (adjust as per taste)
- 4 cups water
- 1–2 teaspoons lemon juice (optional)
- A pinch of salt (optional)
- Wash the citron thoroughly. Slice it thinly, removing any seeds you encounter.
- In a large pot, mix the sliced citron and honey. Stir well to ensure the honey coats the citron.
- Allow the mixture to sit for about 30 minutes to help the flavors meld together.
- Add the 4 cups of water to the pot.
- Place the pot over medium heat. Stir occasionally until the honey completely dissolves.
- Once boiling, reduce the heat to low and let it simmer for about 30-45 minutes.
