  • 2 cups fresh citron (or yuzu), sliced thinly
  • 1 cup honey (adjust as per taste)
  • 4 cups water
  • 12 teaspoons lemon juice (optional)
  • A pinch of salt (optional)

Instructions

  1. Wash the citron thoroughly. Slice it thinly, removing any seeds you encounter.
  2. In a large pot, mix the sliced citron and honey. Stir well to ensure the honey coats the citron.
  3. Allow the mixture to sit for about 30 minutes to help the flavors meld together.
  4. Add the 4 cups of water to the pot.
  5. Place the pot over medium heat. Stir occasionally until the honey completely dissolves.
  6. Once boiling, reduce the heat to low and let it simmer for about 30-45 minutes.
  7. After simmering, strain the tea through a fine mesh sieve to remove the solid pieces of citron.
  8. Taste the tea. Add lemon juice for additional tartness or adjust the sweetness with more honey if desired.
  9. Let the tea cool for a few minutes before serving.
  10. If you have leftovers, store the tea in an airtight container in the refrigerator for up to a week.
