Honey Mustard Surf and Turf Skewers
Ingredients
For the Skewers:
- 1/2 pound beef sirloin, cut into 1-inch cubes
- 1/2 pound large shrimp, peeled and deveined
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 large onion, cut into wedges
For the Honey Mustard Marinade:
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 clove garlic, minced
- Salt and black pepper to taste
Directions
Prepare the Marinade:
- In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, minced garlic, salt, and black pepper.
Marinate the Ingredients:
- Place the beef cubes and shrimp in separate bowls or zip-lock bags. Divide the marinade equally between the beef and shrimp, reserving about 1/4 cup for basting during grilling.
- Let the meat and shrimp marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
Assemble the Skewers:
- Thread the marinated beef, shrimp, red and yellow bell peppers, and onion wedges alternately onto skewers.
Grill the Skewers:
- Preheat the grill to medium-high heat.
- Grill the skewers, turning occasionally and basting with the reserved marinade, until the beef is cooked to the desired doneness and the shrimp are pink and opaque, about 6-8 minutes.
Serve:
- Serve the skewers hot, garnished with fresh herbs if desired.
