Oatmeal Zucchini Pancakes with Homemade Yogurt Sauce

Ingredients:

  • 2 zucchinis
  • 100 g grated cheese
  • 4 tbsp oat flour
  • 2 eggs
  • Chopped chives
  • Salt and pepper, to taste

For the yogurt sauce:

  • 120 g plain yogurt
  • 1 clove garlic
  • Chopped dill
  • Salt and pepper, to taste

Instructions:

  1. Grate the zucchinis onto a plate, sprinkle with salt, mix well, and let sit for 10 minutes. Squeeze out excess moisture and transfer to a bowl.
  2. Add grated cheese, oat flour, eggs, salt, pepper, and chopped chives to the bowl. Mix until smooth.
  3. Preheat oven to 180°C. Line a baking tray with parchment paper. Spoon batter onto the tray to form pancakes. Flatten slightly.
  4. Bake for 20 minutes or until golden brown.
  5. Meanwhile, prepare yogurt sauce by combining yogurt, chopped garlic, chopped dill, salt, and pepper in a bowl. Mix well.
  6. Serve warm pancakes with a dollop of yogurt sauce on top. Garnish with additional chives or dill if desired.
