Ingredients:
- 2 zucchinis
- 100 g grated cheese
- 4 tbsp oat flour
- 2 eggs
- Chopped chives
- Salt and pepper, to taste
For the yogurt sauce:
- 120 g plain yogurt
- 1 clove garlic
- Chopped dill
- Salt and pepper, to taste
Instructions:
- Grate the zucchinis onto a plate, sprinkle with salt, mix well, and let sit for 10 minutes. Squeeze out excess moisture and transfer to a bowl.
- Add grated cheese, oat flour, eggs, salt, pepper, and chopped chives to the bowl. Mix until smooth.
- Preheat oven to 180°C. Line a baking tray with parchment paper. Spoon batter onto the tray to form pancakes. Flatten slightly.
- Bake for 20 minutes or until golden brown.
- Meanwhile, prepare yogurt sauce by combining yogurt, chopped garlic, chopped dill, salt, and pepper in a bowl. Mix well.
- Serve warm pancakes with a dollop of yogurt sauce on top. Garnish with additional chives or dill if desired.
