Baked Caesar Chicken

Ingredients:
- 4 boneless, skinless chicken breasts
- 1½ cups freshly grated Parmesan cheese, divided
- ½ teaspoon freshly ground black pepper
- 1 cup Caesar salad dressing
- ½ cup sour cream (optional)
Directions:

Prepare the Oven and Pan:
Preheat your oven to 375°F (190°C). Spray an 8×11½-inch baking pan with nonstick cooking spray.

Prepare the Chicken:
If the chicken breasts have uneven thickness, place them in a Ziplock bag and pound them to an even ¾-1 inch thickness using a meat mallet for even cooking. Sprinkle both sides of each breast with 1 cup of the grated Parmesan cheese and the freshly ground black pepper. Arrange the chicken in the prepared baking dish.

Make the Caesar Mixture:
In a small bowl, whisk together the Caesar salad dressing and sour cream until well combined. You can omit the sour cream for a lighter version. Pour the Caesar dressing mixture evenly over the chicken breasts in the baking dish. Sprinkle the remaining ½ cup of grated Parmesan cheese over the top.
