Ingredients:
- 200g self-raising flour
- 200g caster sugar
- 200g unsalted butter, softened
- 4 large eggs
- 1 tsp baking powder
- 2 tbsp milk
- 1 tsp vanilla extract
- 150g strawberry jam
- 250ml double cream, whipped
- Icing sugar for dusting
Directions:
- Preheat your oven to 180°C (350°F). Grease and line two 20cm round cake tins.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Gradually add the eggs, one at a time, beating well after each addition.
- Sift the flour and baking powder into the mixture, and fold in gently.
- Stir in the milk and vanilla extract until the batter is smooth.
- Divide the batter evenly between the two prepared tins and smooth the tops.
- Bake for 20-25 minutes or until a skewer inserted into the center comes out clean.
- Allow the cakes to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
- Spread the jam over one of the cakes, top with the whipped cream, and then sandwich the second cake on top.
- Dust with icing sugar before serving.
