  • 1 cup of buttermilk
  • ½ cup of vegetable oil
  • 2 large eggs
  • 2 teaspoons of vanilla extract
  • 1 cup of chocolate chips (semi-sweet or dark)
  • Optional: chopped nuts or chocolate chunks for added texture

Instructions:

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or a light greasing.
  2. In a large bowl, thoroughly whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until uniformly blended.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until the mixture is smooth.
  4. Combine the wet ingredients with the dry ingredients, gently folding until just mixed. Avoid overmixing; a few lumps are acceptable.
  5. Stir in the chocolate chips (and optional nuts or chocolate chunks, if desired).
  6. Evenly distribute the batter among the muffin cups, filling each approximately ¾ full.
  7. Bake in the preheated oven for roughly 18-20 minutes or until a toothpick inserted into the center of a muffin emerges clean or with a few moist crumbs.
