Ingredients

Scale
  • 2 cups penne pasta
  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  3. In a bowl, toss the chicken pieces with Cajun seasoning, salt, and pepper until well coated.
  4. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes, until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
  6. Stir in the cherry tomatoes and corn, followed by the cooked chicken. Pour in the heavy cream and chicken broth, stirring until combined. Bring the mixture to a simmer.
  7. Remove the skillet from heat and add the cooked penne pasta. Stir in half of the mozzarella cheese and the grated Parmesan cheese. Mix until everything is well combined.
  8. Pour the pasta mixture into a greased 9×13 inch baking dish, spreading it evenly.
  9. Sprinkle the remaining mozzarella cheese evenly over the top.
  10. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
  11. Once baked, take out the pasta bake and let it cool for a few minutes. Garnish with freshly chopped parsley before serving this delicious creamy Cajun chicken.
