Ingredients:

  • 2 boxes (14.1 oz each) refrigerated pie crust
  • 1 can (21 oz) peach pie filling
  • 1 tsp cinnamon
  • 2 Β½ cups powdered sugar
  • ΒΌ cup milk
  • 1 egg white, beaten

Instructions:

  1. Preheat your oven to 425Β°F. Allow the pie crusts to reach room temperature while you prepare the filling.
  2. Empty the peach pie filling into a shallow bowl. Using a fork and knife, dice the peaches into small pieces. Add cinnamon and blend well. Set aside.
  3. Unroll the pie crusts and cut out 6 circles from each crust using a 4-inch biscuit cutter. You might need to re-roll the scraps to get the 6th circle.
  4. Using a 1 tbsp cookie scoop, drop the peach pie filling into the center of each pie crust circle. Fold the crust in half and pinch the edges completely. Fold the pinched edges over and seal them by pressing with the tines of a fork. Poke each hand pie once with a fork to prevent bursting.
  5. Beat the egg white in a small bowl until frothy. Brush it over the tops of each hand pie.
  6. Place the pies on a parchment paper-lined baking sheet, about 1 inch apart. Bake for approximately 15 minutes, or until they are browned.
  7. While the pies are baking, whisk together the powdered sugar and milk until smooth. Once the pies are cooked, remove them from the baking sheet and immediately dip them (while warm) into the glaze, ensuring they are completely coated. Use two forks to flip them in the glaze and remove them carefully. Return them to the parchment paper and allow them to set for about 5 minutes.
