  • 1 pound pasta (fettuccine or linguine recommended)
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 scotch bonnet pepper, finely chopped (or to taste, seeds removed for less heat)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste
  • 1/2 cup diced pineapple (optional)
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and chopped scotch bonnet pepper. Cook for 1 minute until fragrant.
  4. Add shrimp to the skillet. Season with thyme, allspice, cayenne pepper (if using), salt, and black pepper.
  5. Cook shrimp for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  6. Pour heavy cream and chicken broth into the skillet. Bring to a simmer, stirring occasionally.
  7. Reduce heat to low and stir in Parmesan cheese. Continue to stir until the sauce thickens slightly.
  8. Add cooked pasta and reserved pasta water (if needed to reach desired consistency) to the skillet with the sauce. Toss to coat.
  9. Return the cooked shrimp to the skillet. Add pineapple (if using), parsley, and cilantro.
  10. Toss everything together gently until the shrimp is heated through and the pasta is well coated with the creamy Jamaican sauce.
  11. Serve your delicious Jamaican shrimp pasta immediately.

Notes

  • Adjust the amount of scotch bonnet pepper to control the spice level.
  • For a milder version, remove all seeds and membranes from the scotch bonnet pepper.
  • If you don’t have scotch bonnet peppers, you can substitute with habanero peppers or a pinch of red pepper flakes.
  • Feel free to add other vegetables like bell peppers or spinach.
  • For a richer sauce, add a tablespoon of butter at the end.
