4 cups Romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 bell pepper (red, yellow, or green), diced
1 cup red onion, finely chopped
1 cup Kalamata olives, pitted and sliced
1 cup cooked chickpeas, drained and rinsed
1 cup mozzarella cheese, diced
½ cup Parmesan cheese, grated
½ cup Italian dressing (store-bought or homemade)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Wash and chop the Romaine lettuce, cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces.
In a large mixing bowl, add the chopped Romaine lettuce, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, chickpeas, mozzarella cheese, and Parmesan cheese.
Pour the Italian dressing over the salad mixture. Start with half and add more to taste.
Sprinkle salt and pepper over the salad to enhance flavors. Mix well to combine all ingredients thoroughly.
For a better flavor, let the salad chill in the refrigerator for about 10 minutes before serving.
Just before serving, sprinkle fresh parsley on top for a burst of color and freshness.
Transfer the salad to a serving bowl or platter and enjoy!
