Italian Stuffed Beef Rolls in Tomato Sauce
Recipe
Ingredients:
- 8 thin beef steaks
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup pine nuts, toasted
- Salt and pepper to taste
- 3 tablespoons olive oil
- 1 onion, finely chopped
- 2 cans (14 oz each) crushed tomatoes
- 1/2 cup red wine
- 1/2 cup beef broth
Directions:
- Lay the beef steaks flat and season both sides with salt and pepper.
- In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, pine nuts, and a pinch of salt and pepper.
- Spread the breadcrumb mixture evenly over each steak, then roll them up tightly.
- Heat the olive oil in a large skillet over medium heat. Brown the beef rolls on all sides, then remove them from the skillet.
- Add the finely chopped onion to the skillet and sauté until translucent. Pour in the red wine and beef broth, scraping up any browned bits from the pan.
- Add the crushed tomatoes and bring the mixture to a simmer. Return the beef rolls to the skillet, cover, and simmer for 1 hour, until the beef is tender.
