This bread is a keto-friendly option made with only grains, cottage cheese, and eggs—no flour involved. It’s a great choice for those avoiding wheat and rye breads on the keto diet. Finding the right bread options on a keto diet can be challenging, but this cottage cheese and egg bread offers a delightful treat, especially when craving bread-based dishes.
Ingredients:
- 500g full-fat or semi-fat cottage cheese
- 7 eggs
- 1/2 cup rolled oats
- 1/2 cup buckwheat flakes (if unavailable, use oats)
- 1/2 cup barley flakes (if unavailable, use oats)
- 1/2 cup flaxseeds
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds (or sunflower seeds again)
- 1 teaspoon baking powder
- 1/2 teaspoon dried garlic
- 1/2 teaspoon black cumin seeds (nigella seeds)
Instructions:
- Crack the eggs into a mixing bowl and beat on high speed with the cottage cheese.
- Add the rolled oats, buckwheat flakes, barley flakes, sunflower seeds, pumpkin seeds, flaxseeds, baking powder, dried garlic, and black cumin seeds. Mix well.
- Transfer the mixture to a parchment-lined baking tin.
- Bake in a preheated oven at 180°C (360°F) for 60 minutes.
- The bread won’t rise much but will have a lovely appearance and taste delicious when sliced!
